This fresh-pressed juice is better than pop. Beet and chard are close relatives. Their
earthy accents are mellowed with the addition of apple and lime. (Juicing tips and techniques: All Juiced Up.)
4 large stalks swiss chard (4 oz/125 g)
1 lime, peeled, halved, excess pith removed
2 apples, stemmed, quartered
1 small beet (3 oz/90 g), trimmed
Crushed ice to taste
Sparkling mineral water to taste
Process chard, lime, apples and beet in electric juicer according to manufacturer’s instructions. Add crushed ice to tall glasses. Stir juice. Pour over ice. Add splashes of mineral water.
Makes 2 cups (500 mL).
- Use natural mineral water, not club soda.
