This fresh-pressed juice is better than pop. Beet and chard are close relatives. Their earthy accents are mellowed with apple and lime.
4 large stalks swiss chard (about 4 oz/125 g)
1 lime, peeled, halved, excess pith removed
2 apples, stemmed, quartered
1 small beet, trimmed
Crushed ice to taste
Sparkling mineral water to taste
Process chard, lime, apples and beet in electric juicer according to manufacturer’s instructions. Stir, pour into tall glasses with crushed ice and add splashes of mineral water.
Makes 2 cups (500 mL).
