Kale Mary Juice

This twist on the Bloody Mary for juicers is a welcome change from sweet drinks. It even includes a hit of onion.

6 tomatoes, stemmed, halved
4 stalks kale (about 6 oz/175 g)
1 small lemon, peeled, halved, excess pith removed
1/4 small red onion
1 stalk celery, cut in segments
Sea salt + freshly ground pepper to taste
Ice cubes to taste

Process tomatoes, kale, lemon, onion and celery in electric juicer according to manufacturer’s instructions. Stir in salt and pepper. Pour into tall glasses with ice cubes.

Makes 3-1/4 cups (800 mL).

Bloody Green Mary
Substitute spinach or chard by weight for the kale.
