I adore this juice. The sweet potato gives it a delightful velvety texture, the orange adds tang, and the celery and ginger contribute some kick. Don't be afraid to juice sweet potatoes — they yield a surprising amount of liquid.
4 oranges, peeled, halved, excess pith removed
4 stalks celery, cut in segments
1-inch (2.5 cm) piece ginger
1 small sweet potato, peeled
Process ingredients in electric juicer according to manufacturer’s instructions.
Makes 4 cups (1 L).

- There’s no need to peel the ginger. However, the juicer won't have to work as hard if you remove the sweet potato's leathery peel.
