I adore this healthy juice. The sweet potato gives it a delightful velvety texture, the orange adds tang, and the celery and ginger contribute some kick. Don’t be afraid to juice sweet potatoes — they yield a surprising amount of liquid. (Juicing tips and techniques: All Juiced Up.)
4 oranges, peeled, halved, excess pith removed
4 stalks celery, cut in segments
1 piece ginger (1-inch/2.5 cm)
1 small sweet potato (8 oz/250 gg), peeled
Process ingredients in electric juicer according to manufacturer’s instructions.
Makes 4 cups (1 L).
- The juicer won’t have to work as hard if you remove the sweet potato’s leathery peel. However, there’s no need to peel the ginger.
