With spinach, pineapple and a hint of coconut, this is a refreshing twist on my S'Pina Colada smoothie from The Complete Leafy Greens Cookbook.
1/2 bunch spinach (about 6 oz/175 g)
1/2 pineapple, peeled, cut in chunks
1 cup (250 mL) coconut water
Crushed ice to taste
Process spinach and pineapple in electric juicer according to manufacturer’s instructions. Stir in coconut water. Pour into glasses with crushed ice.
Makes 2 cups (500 mL).
