With spinach, pineapple and trendy coconut water, this healthy juice is a refreshing twist
on the S’Piña Colada smoothie from my third book, The Complete Leafy Greens Cookbook. (Juicing tips and techniques: All Juiced Up.)
1/2 bunch spinach (6 oz/175 g)
1/2 pineapple, peeled, cut in chunks
1 cup (250 mL) coconut water
Crushed ice to taste
Process spinach and pineapple in electric juicer according to manufacturer’s instructions. Stir in coconut water. Add ice to glasses. Pour in juice.
Makes 2 cups (500 mL).
- Use additive-free, natural coconut water.
