This juice is unusual, but don’t dismiss the combination. It's a pleasant surprise. Squash juice is sweet and creamy, and sunchokes contain an important soluble fibre called inulin. Inspired by a recipe from Steven Satterfield, chef of Miller Union restaurant in Atlanta.
1 lemon, peeled, halved, excess pith removed
1-inch (2.5 cm) piece ginger
1 butternut squash, peeled, seeded, cut in chunks
8 oz (250 g) sunchokes, peeled
Process ingredients in electric juicer according to manufacturer’s instructions.
Makes 2 cups (500 mL).

- You can use pumpkin instead of squash.
- Sunchokes are gnarly and dirty. I find it faster to peel them instead of scrubbing. Sunchokes are often called Jerusalem artichokes, or sometimes "fartichokes" because they can cause flatulence.
Tested in Imperial, using centrifugal juicer
