This juice is unusual, but don’t dismiss the combination. It’s a pleasant surprise. Winter squash juice is sweet and creamy, and sunchokes contain an important soluble fibre called inulin. 1 lemon, peeled, halved, excess pith removed
1 piece ginger (1 inch/2.5 cm)
1 butternut squash, peeled, seeded, cut in chunks
8 oz (250 g) sunchokes, peeled
Process ingredients in electric juicer according to manufacturer’s instructions.
Makes 2 cups (500 mL).
- You can use pumpkin instead of squash.
S is for Sunchoke: You may know sunchokes by their alternate name, Jerusalem artichokes. They are sometimes jokingly called “fartichokes” because they can cause flatulence due to their fibre content. Sunchokes are gnarly and dirty. I find it faster to peel them instead of scrubbing.
